You can play Yakuza Zero or not as that is totally a stand alone game set in the 1980s and not really related to anything else in the franchise. If you start at the third one, you are going to be pretty lost. They really do have plot lines and characters that continue from game to game. It's not like a Star Wars situation where they started with the third game and went backwards. These games really need to be played in order.
